I was using Panther Mail 1.3.9(v619) and haven't changed any 'real' Preferences since I set up Mail back in Jaguar. I never had a plain text mail bounce, and was shocked at the 'windows-1252' character set. I assumed incorrectly that it was something my ISP Cox was doing (they're a Microsoft only ISP). In searching for the answer to the bounces, it appears that my "default" Text Encoding preference is now
