I am in the same frame of mind as you, but on a much tighter budget. But
personally I would always use a SCSI drive. Im building a computer now with an
Ultra 160 SCSI card and a 10k rpm drive, ATI 9200 (not the best but cheap at
$130), going to be either a 450 or 466MHz G4 for now, minimum of 640MB RAM,
multiple harddrives, and a DVD/CDRW drive. May I also suggest watercooling with
some overclocking?

Will the system boot from SCSI? I actually wanted to go with SATA but found that there were problems with the system not wanting to boot from SATA drives. I'm not exactly familiar with SCSI. I have a no-limits budget (because if I can't get it with the disposable income from one paycheck, I can combine multiple paychecks!) what would THE BEST SCSI set up be? Should I go for the dual 1.8GHz or dual 1.4GHz?
