/Users can be moved per the instructions at <http://www.bombich.com/ mactips/homedir.html> I have done this numerous times. Just really be careful about volumes with spaces in their names, make sure you escape them out.

10GB for System and Applications, though, isn't bad. Make sure you run something like Delocalizer to get rid of all the uneccessary language stuff. and you can always create reliable symlinks inside of Applications to directories on other volumes.

/Applications turns out to be trickier; the problem is that system updates and such don't always honor symlinks. There's some discussion of it in the forums at Mike's site, iirc.
