I still think using a DV camcorder to digitize the analog tape is the easiest way to deal with it and after you are done you now have a DV camcorder to use. It doesn't have to be a great camcorder since you are only using it for converting the file to digital, and older Sony DV camcorders can be had for $100-$150 that will work just fine.
If you are only converting the tapes and not editing them, the free iDVD from Apple or iMovie and Toast ($60) works perfectly for making the DVD.
