Just some more info re Photoshop itself... /Applications/Adobe Photoshop CS2/install.log
contains a complete listing of all the files that were installed during Photoshop's installation.
This does not include, however, any of the files (prefs etc) that are created in your user directory tree when you first run Photoshop.
