I'm also very obsessive about my iTunes art (& lyrics). I have K score  
tracks, less than 500 are missing art. The vast majority of these  
can't accept art (.pdf, .flac, .ogg, mpeg, wav, etc.). I use a script  
called "iTunes Find Artwork-less" that locates all tracks without art  
and place them into a playlist so you can fix this. It works fine for  
me in iTunes 8. You can get this script and some other helpful scripts

PS - I mentioned .pdf not accepting art, most people don't realize  
iTunes accepts PDF files. This is great for CDs that have accompanying  
leaflets or printed material which is often available in .pdf format  
already.
