I'm also very obsessive about my iTunes art (& lyrics). I have K score tracks, less than 500 are missing art. The vast majority of these can't accept art (.pdf, .flac, .ogg, mpeg, wav, etc.). I use a script called "iTunes Find Artwork-less" that locates all tracks without art and place them into a playlist so you can fix this. It works fine for me in iTunes 8.
