When you use cmd-v, you can read the startup log in the Console App  
once booted, look in 'All Messages'.

In cmd-s, you're stuck with white on black.

If you're needing to use single user mode more than once in a blue  
moon, you have serious hardware problems. I don't believe I've used  
single-user mode more than twice in all my time using OS X.
