Do you have the Hardware Test disc? If not, you can possibly find an appropriate Apple Service Diagnostic disc online (I might be able to help OFF-LIST). Whenever a new HD isn't recognized at all, it's normally a hardware issue, and since the HD is known good, and you've hopefully ruled out bad cables (note: "look ok" isn't good enough), that leaves a bad alternative: bad motherboard in G5 iMac.

As I'm sure you're aware, the G5 iMacs had a large issue with bad capacitors on the motherboard. A visual inspection for popped capacitors would be a good idea (see photos here:<http://jimwarholic.com/2008/07/how-to-repair-apple-imac-g5.php >). There are many sites online that sell replacement capacitor kits for G5 iMacs for as low as $16 or less, and plenty of videos of repair on YouTube or elsewhere. I'd verify the cables are good and inspect the motherboard for bad capacitors for now.
