You could use ffmpeg the cmd is ffmpeg -f image2 -i img%d.jpg /tmp/a.mpg
This would make the files img1.jpg img2.jpg .... into a mpg video. But it would mean writing each image to a dir on the disc ie pic01.jpg pic02.jpg .... Then once you press a stop button then you run the cmd above. But writing the images to disk would drop the frame rate. I hope that is clear.
