All you need to send an email are headers stating who the email is from, the subject and a couple of other things. Those are the bare minimum. I don't think there's any technical requirement stating that an email even needs to come from a valid address. Email wasn't built to be secure. Of course all sorts of headers have been added since the internet exploded in popularity.
