We need more information here.

Can you please provide how big the instances are that are running on the cluster when this message gets created?

Please also provide the output of:
 gnt-node list
 gnt-instance list

I am also not entirely sure what you mean with 'leaves out one node'? When you have only 2 nodes, the n+1 redundancy is tested under the assumption that one of the instances running on the other node fails over. So it checks for node1 "do I have enough ram in case instance X on node2 fails" and vice versa (for all instances). If the nodes don't have enough memory to accommodate the biggest instance of the other node, this message appears.
