Currently such an operation isn't supported as Ganeti always relies on the hypervisor being available - this is working as intended. While in theory it could be probably implemented, in practice there is no need.

Ganeti supports multiple hypervisors on the level of node-groups (all nodes in a group have the same hypervisor).

If you don't need to retain any instances from the original setup, the best way is to completely remove the cluster and create a new one. If you need to keep the instances, I'd suggest you to add another node-group with the other hypervisor, failover instances there and then remove the original node-group (although this procedure hasn't been thoroughly tested).
