The server fields will not go away without any intervention, so they will continue to use up memory on your system until you either change them or restart MarkLogic. They exist in memory until the memory is taken down (by a server restart, for example) or until it is overwritten by another call to xdmp:set-server-field for the same named server field on the same App Server.
