It helps in the tasks you usually use in desktop or server environments. Most of those kernel patches makes your system more responsive but it doesn't do any miracles. I recommend for both use server/desktop gentoo-sources. If you want a kernel for a real server probably you want hardened-sources. For desktop(including audio servers in you case) gentoo-sources or ck-sources. Beware that most of the patches available to tune your scheduler aren't for general use so you can expect a better responsiveness when you run xorg+firefox+xterm but you can get worst when you run apache, php, sql.
