The directories that you are creating are being created in the file system that the liveCD creates in RAM so that you will have mount points for your hard drive partitions. As for why it says there is already a /mnt/gentoo mount point: It was probably added to the liveCD image and someone forgot to remove that step from the instructions. -- Thomas M.
