LVM stands for logical volume management and EVMS for enterprise volume management system. They are tools for managing files systems and partions across raid arrays SANs and other cool things, but they cool even on laptops and desktops. Check out the gentoo install docs for an LVM howto and check Daniel Robbins article on EVMS for IBMs Developer works site. Google is also your friend for this.
