I tried the SELECT INBOX thing.  I got similar options
to the ones you described.  I changed the setting in
evolution from espersunited.com to 192.168.1.2 and it
brought up the default IMAP folders.  I guess I should
have tried that earlier.  I still need to work out the
kinks with my router/DNS, but I'll work on that
tomorrow.  Thanks for all your help!  I just hope I
can figure the other things out later...
