Thank you for the answer. So basically, geotools must first complete their 3d 
support before Geoserver can use 3d data.

GeoServer (and GeoTools on which it is based) does not yet support 3D 
geometries. There is partial support for 2D+1, in which the third 
dimension is just passed through, but not reprojected or used in spatial 
filters. This may be sufficient for some use-cases, but is not complete 
nor (in my view) well-tested.
