http://docs.geoserver.org/latest/en/user/geowebcache/config.html#custom-configuration
you'll have to create new layers in geowebcache.xml, just don't name it the
same than the geoserver ones. For example, if there's a topp:states layer in
geoserver it should be ok if you just call it states in geowebcache.xml.
I know it's messy.
