The stuff you see in GeoServer 2.0.1 and onwards is configured straight 
from GeoServer's internal catalogue.

If you want to define your own layers or grid sets, create 
geowebcache.xml (just like you would for the standalone version) and put 
it in <GEOSERVER_DATA_DIR>/gwc/geowebcache.xml

Make sure that your custom layers and grid sets do not have names that 
overlap with the built-in ones.
