Hello Mark, tiled=true is the prescribed way to use the wms end point as WMS-C. So use that. GWC will request a metatile, meaning that GeoServer's WMS metatiling won't be involved (otherwise you'd be double-meta-tiling).
To set the GWC meta tiling factors go to the GeoServer's GWC config page and change the "Default meta-tiling factors". Hope that helps.
