Ok, thank you a lot for this info Andrea...even it is a real downer for  me :(
I always expected that I can easily filter Raster datasets but it seems that 
thanks to some extensions  some more complicated  operations are possible while 
this will wait for another  standard...
What actually is the WCS then for? For me it seems like some very unuseful 
extra standard...at least I haven't seen any demo that shows the added value.

I can clarify my plans a bit more: While styling seems to do exactly the things 
we need (Make certain areas of a raster transparent, for instance all elevation 
above a certain percentage) it works only visually when viewing in the map. But 
our application should combine some exclusion masks from an ensemble of raster 
layers (with a filter applied to them). This will be done by a WPS, so we need 
real filtered datasets and not only visually applied styles.

This works only with Geoserver or plain WMS?
So for example it should work with a GeoTIFF that has a property table ?

It is a GS specific extension and works only if you have loaded the rasters as 
a image mosaic,
the mosic index contains the name and spatial location of each tile, but it can 
be extended
to have extra informations attached to it, like time or elevation of that 
granule (that's how
we handle time and elevation for rasters in GeoServer)
