It is the equivalent of WFS, access raw data as opposed to pretty pictures,
RGB ones.
So you can get out a portion of a coverage, reproject it, select bands,
rescale it, and still get it out in its "native" representation
(e.g., 16bit dem, not a colored image).

But it cannot do filtering on top of the pixel values, for that one needs
WCPS.

GeoServer WPS can handle raw coverages as well, and has direct access to
the raw data when you refer to the internal WCS as the
source, one could create a process that does the filtering based on the
raster content
