The Styling section in the GeoServer User Guide has lots of reference and
tutorial information. Have a look at the latest version here:

The SLD Cookbook has a lot of examples of basic SLD usage, and the SLD
Reference now has pretty complete coverage of the SLD spec as implemented
in GeoServer. There's some good tips and tricks in there as well for more
advanced usage.
