In order to remove a property, it needs to be nullable at the database level too (the XML schema behind DescribeFeatureType reflects the structure of the database 1:1, to ensure WFS-T editing might work... and yes, it does it even if you don't need it, there is no way to turn off this behavior). You can create a "sql view <https://docs.geoserver.org/master/en/user/data/database/sqlview.html>" on top of the table, that will make all columns nullable, or wait for 2.21.0 to be out, where you'll be able to edit the nullability of columns in the UI.
