You're right. I had a quick look, saw gt-csv and assumed it is behind it.
So it's just in GeoServer CSVOutputFormat, it should be a lot simpler.
Can I submit the patch to you then?

a bit confused here. The CSV store in GeoTools has indeed been written by Jody, 
but the CSV WFS output format
from GeoServer is not using it... or have I lost some steps in its history?
