Well, I've never used the Styling stuff outside of parsing an XML
document, so take this with a grain of salt.
The best thing to do would be to create an SLD.xml document and have
geotools parse it then look at the result. That should make everything
very obvious.
You should just have to call:
TextSymbolizer#addToOptions("grouping","true");
