Depending on your licencing requirements you have a couple options. I would look into either borrowing code from GeoServer (if you wish to follow the GPL) or using GeoServer to serve up images to your applet (it would be installed as a stand-alone server which you hit from your applet, probably from the same WebServer). This second option is a bit more fragile, but involves alot less coding on your part (I think there might already be some applet code around too, just search for it depending again on your licencing).
