Hi Andrea, The fact that Tom didn't know about it is not surprising. I suspect GeoTools Functions are an example of where the knowledge gap between core developers and average users is very large. There is relatively little in the docs yet about Functions compared to other parts of the library. For example, VolatileFunction doesn't appear anywhere in the user guide and although it has good javadocs (thanks to you) you have to know that it exists (and why) to be reading them. No criticism intended in the above.
