My brothers and I used to make what we called "disposable
mazes"....basically all you do is cut holes in boxes (that can be ANYTHING
from cereal boxes to rinsed milk cartons to used toilet paper rolls) and
then connect them together with tape so the gerbil can run from "room to
room" or "level to level" or both....  It takes some thinking to make really
complicated ones, but you can make them as big as you want and as fancy as
you want....and they are a blast for both humans and gerbils .....and can be
tossed as soon as the gerbil gets tired of them or it starts to get full of
holes or nasty li'l smells.  Our gerbils used to catch on really fast and we
were always making new ones as fast as our mother could use up the boxes for
us....

A more challenging one will have more holes, but fewer exits to the
outside...and the smaller the holes, the longer it takes the gerbil to learn
it's way around the maze because it has to enlarge each hole as it goes
along...
