I am sorry to hear about this I can imagine how distressed you are.
It is almost impossible to humanely kill a gerbil at home. The main
option is a heavy blow to the head.
It may be better to consult a vet. Gerbils have remarkable powers of
recovery and can adapt well to life with damaged limbs etc. The vet may
be able to help make sure you gerbil recovers well, or if that is not
possible, be able to give her a peaceful end with barbiturates.
