I would suspect that any gloves thick enough to be gnasher proof would
be too stiff to grip gerbils properly. If I saw gerbils fighting I would
not spend time getting on a pair of gloves. If I was watching a pair on
introduction I would separate them before the fighting got so bad.
I have only been bitten twice when separating gerbils. Once was the
first time I saw two gerbils fight on introduction (pre split cage), the
second time was when I noticed two females that had lived together for
some time were fighting. Although I bled, neither was that painful. In
my opinion, the smaller teeth of mice hurt much more! having seen
hamster and rat teeth I just don't want to take them on!
