but how can I confirm her sex if I can't even pick her up?

Use an unbreakable jar (old peanutbutter jar, some come
in plastic now) with a few holes punched in the lid.
Put in cage on side, with a food treat at the back,
wait until she goes in and quickly use the lid to
prevent her from getting out.

You can then hold the jar up and look at her underside
without her escaping.

Don't keep her in the jar very long and put her back by
putting the jar all the way in her cage first, and gently
tip her out of it.
