Sorry to hear about the biting.

My gerbil only likes me to hold her if she is eating a treat.  Maybe if you gave him a 
treat he really likes, like a nut or something, you could hold or pet him while he was 
eating and he wouldn't bite.  My gerbil's very favorite treat is slivered almonds.
