A gerbil with a drinking problem... Almost funny, but then not, due to the worry it caused you. I think she will probably figure it out. She may have had a different type of water bottle before. And just not be used to the new one. Or if she lived with her mother and father till you got her, they may have been giving her water from their own mouths.
Keep reminding her how the bottle works and that it is where the water will be when she needs it and she SHOULD (crosses fingers) learn to drink from it soon. In the meantime if you are really worried about her getting some sort of moisture you can feed her things like a little sprig of parsley, a small shred of kale, a piece of apple or pear, or even a piece of carrot... something like that.
