Another place we may want to use these options is in install_arrow() on the M1 macs because we aren't building nightly ARM binaries (and the Intel binaries crash on Rosetta too, as it turns out). So we'll want `install_arrow(nightly = TRUE)` to install from source and not use autobrew on M1s.
