Update here - @friendlymatthew has a PR for describing a shredded schema in https://github.com/apache/arrow-rs/pull/7921 - We also now have the ability to append nested `Variant`s directly with the builders - I have a PR that lets us write variants directly into in progress builders here: https://github.com/apache/arrow-rs/pull/7911 My suggested next steps are: 1. Finalize the API in https://github.com/apache/arrow-rs/pull/7921 2.
