I think `ReturnInfo` would also need to be updated to return a `Field`
rather than a subset:
```
/// Return metadata for this function.
///
/// See [`ScalarUDFImpl::return_type_from_args`] for more information
#[derive(Debug)]
pub struct ReturnInfo {
return_type: DataType,
nullable: bool,
}
```
