You only need to copy Gnucash.app. The other files, README.txt, NEWS.txt, etc. are in the dmg and renamed with the .txt so you can easily read them with QuickLook. They're also inside Gnucash.app (control-click on Gnucash.app in Finder and select "Show package contents" from the context menu) at Contents/Resources/share/doc/gnucash, though those aren't renamed for QuickLook.
