https://github.com/Gnucash/gnucash/releases describes the release changes but your question is obviously about understanding the practical impact from a user's perspective. I note lots of Gremlins reported in the mailing list about V5.
https://lists.gnucash.org/pipermail/gnucash-user/2024-April/111721.html seems relevant (no data file changes confirmed by lead developed), GnuCash V4.14 being the last V4 release. Using the same data file with V4.14 or V5.6 seems a low risk upgrade path as long as you are not running custom reports.
