If the version of GnuCash you install on the Linux Mint system is "compatibile", your .gnucash will open just fine. "Compatibile" just means: equal or greater version number.
You will also want to move your config files. I don't know where they are under MS-Windows, but under Linux they would should be under $HOME/.config/gnucash/ for recent verions of GnuCash and $HOME/.gnucash for older versions.
