That right click option wording hints to me that Nick is using a Mac. (though Linux is still a possibility)

Do you use a multi-monitor setup by chance, or did you have another display connected when you last launched GnuCash?

If so, check the other display, turn it on if off, or reconnect it if possible. The GnuCash window might indeed have launched and is there instead.

Another thing to check is if Activity Monitor shows it as a running app. (or other system monitor app if you are not on a Mac)

If indeed on a Mac, try removing the icon from the doc (you can just drag it off) and then use the Command key to bring up Launchpad, find GnuCash there and try to launch it. Let us know what happens.
