COOKIE BOUQUETS What's even better than a bouquet of flowers? A bouquet of cookies, of course! Kids and adults alike will have a ball making cookie lollipops and decorating flowerpots to put them in. This fun project makes a great gift for any occasion. This is what you will need: 1. An earthenware or terra cotta pot (don't use plastic unless it's heavy - you don't want your bouquet to fall over!) 2. A chunk of Styrofoam or oasis (green florists' foam) at least as big as the pot. 3. Long, heat-proof wooden sticks, skewers, or chopsticks. 4. Small plastic bags or plastic wrap to cover the cookies. 5. Curly ribbon to tie the plastic shut . 6. Raffia, Spanish moss or crumpled tissue paper to cover up the foam block. Trim the foam to fit snugly inside the pot, making sure the top of the foam is just below the top of the pot. Make your cookies If you are making rolled cookies (like sugar cookies) rather than drop cookies (like chocolate chip or oatmeal cookies), roll them out nice and thick - about 1/2 inch. You'll also want to choose a cookie recipe that will not spread too much when it bakes, or your cookies will be too thin to stay on their sticks. To control the spread of your cookies, take these steps: 1. Use margarine or vegetable shortening rather than butter in your recipe. 2. Refrigerate the cookie dough before shaping, and again before baking. 3. Do not grease the cookie sheets. (A fabulous, mess-free alternative to greasing the pan: Parchment paper.) Follow the recipe directions for making the cookie pops, ensuring that the sticks you use are long enough for the purposes of your bouquet. Gently push the sticks or skewers far enough into the cookie so they will stay firmly planted on their 'stems.' Make sure that the portion of the stick that's inside the cookie is completely surrounded by dough and not poking out anywhere. Patch with extra dough if necessary. Always put the sticks in BEFORE baking. Watch the baking time carefully - if you've made large cookies, you may need to turn down the oven temperature and bake them longer if they appear to be done on the bottom before the middle can catch up. Remove the cookies from the pan with a spatula; don't handle them by their sticks until they're completely cool. Decorating Once they're cool, you can proceed to the fun part: decorating! Finishing Touches When each and every cute cookie is decorated and dry, it's time to wrap them up. Fit a plastic bag or a sheet of plastic wrap over each one and tie it shut. Don't skimp on the ribbon! Use several different colors, and curl it into bouncy coils that cascade down from each cookie. Now it's time to plant your cookie garden: gently push the cookie sticks into the foam. Leave the middle cookies tall and proud, but push the outside cookies down lower for a true "bouquet" effect. It's guaranteed to be the sweetest bouquet that you've ever given! Here are some cookie recipesL LOLLILOP SUGAR COOKIES 1 cup shortening, 1/2 cup white sugar, 1/2 cup brown sugar, 1/2 teaspoon vanilla, 1 egg, 2 cups all-purpose flour, 1/2 teaspoon baking soda, 1/2 teaspoon salt Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, cream together the shortening, white sugar and brown sugar. Beat in the egg and vanilla. Combine the flour, baking soda and salt, stir into the creamed mixture. Roll the dough into walnut sized balls. Push craft sticks into the center of each ball. Place balls, with sticks parallel to the cookie sheet, 3 inches apart onto an ungreased cookie sheet. Flatten them slightly using the bottom of a glass dipped in sugar. This is the time to decorate with sprinkles or colored sugar if you desire. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. When cookies are completely cool, wrap in plastic wrap and tie with a pretty ribbon. COOKIE POPS ON A STICK 2 cups butter, softened, 1 teaspoon baking soda, 2 1/2 cups white sugar, 1 teaspoon vanilla extract, 4 1/2 cups self-rising flour, 24 popsicle sticks Preheat oven to 350 degrees F (180 degrees C). Combine butter or margarine, baking soda, white sugar and your favorite extract flavor. Beat these ingredients together with an electric mixer until fluffy. Add self-rising flour Beat well. Roll dough into walnut sized balls. Place them two inches apart onto the cookie sheet and flatten slightly. Press ice cream stick into the flattened side of the cookie, and press down. This way, you know how large the cookie will be when baked. Add whatever topping to each cookie you like, OR, before pressing stick into the cookie, roll each cookie into sprinkles first, then flatten. Bake until edges are lightly golden. Make your own Decorating Frosting: 2/3 cup butter, softened, 4 cups confectioners' sugar, 2 tablespoons milk, 1 teaspoon vanilla extract (optional), 4 drops red food coloring In a medium bowl, cream together the butter, confectioners' sugar, and milk until light and fluffy, about 3 to 4 minutes. Beat in the vanilla and food coloring.
