Wheat is added to quicken the process of fermentation, if I am not
mistaken. It quickens the rot.....much like our beloved state!

Incidentally, add a little feni when adding the caramel for the
colour. Or rum (since finding good pure feni is almost impossible
these days).-rum's sweetness adds to the wine, I think.
