After a bit more investigation, the problem I've been experiencing is not with JSNI callbacks in general but something specific to the callbacks in the facebook javascript client library. GWT 2.0 layout panels have definitely introduced an incompatability with the facebook JSCL but I'll continue to look for a solution.
