I just installed the latest Xcode, and then was able to compile Gregorio following the instructions on the website with no trouble. I remembered having had to put some of the things in myself with an earlier Xcode installation, but this now works perfectly! Now my Gregorio and TeX are back to normal (although now the 2011 install).
On a related note, perhaps we can mention the Xcode installation on the Mac OS gregorio installation page? Also could we mention that you have to type sudo before some of the commands (or at least I do) to give permission to change the files? -- these are things that absolute beginners who want to use Gregorio might be thrown off by. br.
