If you are getting that message, it means that the gregoriotex.tex found
by lualatex is the older version.
I am completely unfamiliar with MacOS, so I can only give general
suggestions. Maybe someone else familiar with MAC OS can give better
instructions.
I recommend starting clean and reinstalling:
1. If you installed gregorio using the installer, first uninstall the
package if possible.
2. Look for any directories (besides the directory with the source code,
if you installed from sources) named gregoriotex and delete them.
3. Reinstall gregorio the same way you did before.
