One thing I have done is to use InDesign tables together with the Caeciliae font by Matthew Spencer. I use Gregorio for most other things, but the couple of times I have been required to set psalms or canticles in Chart Format I have just used tables. If this is a possibility for you, I can give you some of my template files.
