Here is how I do it in the .gabc file:

<v>\color{red}\grestar</v>()

<v>\color{red}Priest/Deacon:\color{black}</v>There(f)fore,(h)

There seems to be an issue if simply uses plain characters that the red
color goes beyond what you want. Hence the \color{black} in the second
example. If you are only coloring macros, then the change back to black
is not necessary.
