Without the gabc file (Litanie), I can't compile your document to get
any idea of what might be wrong. Just examining the tex template,
nothing jumps out at me as being wrong.
However, I'll note that what you have is insufficient for producing a
litany as is pictured in your images. GregorioTeX is only capable of
producing at most two lines of text (the lyrics and their translation)
below the staff. To get the sort of litany structure you depict you
need to employ some tricks that marry a score with a special environment
containing the subsequent lines. Instructions for how to do this are

Finally, a note on page size and font size: the geometry package allows
you to set the paper size to a5 explicitly. Simply pass it the a5paper
option and remove the a4paper option from the class file loading. This
will prevent you from having to deal with inflating the font in order to
re-scale the page down to the final size (something the extarticle class
documentation explicitly recommends you not use it for).
